The region’s culinary specialties include lamb from the pastures, ‘‘fricassée de caïon’’, Savoy cake, Swiss fries and, of course, Beaufort AOP, a typical mountain cheese. Products blending harmoniously with local wines such as La Mondeuse, Le Jacquère and Le Persan.
