They act as seconds to Chef Thomas Prod’homme in all his various tasks. Meet Sous-chefs Mathias Bottau and Victor Sagot.

The kitchen brigade at Le Strato is comprised of 14 cooks including Mathias Bottau and Victor Sagot who now hold the position of "sous-chefs". They assist and back up Chef Thomas Prod’homme in order to guarantee work of unfailing quality in the kitchens.

Supervising the various stations, participating in organizing the set-up, supervising preparation of dishes, helping in their presentation, but also checking on arrivals of fresh produce and their quality, managing stocks and the team's roster…, just some of the tasks they handle on an everyday basis. Rigour and a sense of organization are thus indispensable to the smooth functioning of each service.

This winter, Mathias Bottau and Victor find the same team in the kitchen for the fourth season running. "It's rare in Courchevel to see so many people return to the same establishment, season after season," they agree. "Everyone is happy to spend the winter together again." Especially as a new challenge awaits them this year with the inauguration of the S Corner, the chic street-food concept retweaked with products from Savoy at Le Strato. "Thanks to this new menu, we are proposing something innovative in Courchevel, it's highly motivating. Our guests are in for a surprise!"
